Dinakdakan is an Ilocano delicacy made with grilled pork parts such as the face, ears, liver. The charred meats are chopped into small pieces and tossed in a tangy calamansi or vinegar dressing with minced ginger, red onions and chili peppers. Added with mayonnaise is then stirred in to add creaminess.
Ingredients
250 g Pork Belly or Pork Face( boiled and grilled)
1 Red onion(Slice)
1 Red chili peppercut into thumb size or smaller
1 Green chili peppercut into thumb size or smaller
2 calamansi
1 tsp mayonnaise
1 pinch Salt, PepperAs your taste
2 BayLeaf
1 Garlicpeeled and minced

Boiled the pork with salt, pepper, bayleaf and garlic until soft.

After boiling, grill the pork and cut into bite size pieces.

Mix the grilled pork with mayonnaise, calamansi, Green/Red chillies and slice onion. Mix well

Served with white rice. Enjoy
