Tapsilog, a popular Filipino all-day breakfast dish, is a combination of tapa (marinated beef), sinangag (fried rice) and itlog (egg, traditionally fried sunny side up). So with this combination you end up with tap-si-log. This is traditionally a breakfast meal.

Ingredients
For the garlicky tapa
- 400 grams sukiyaki or yakiniku cut beef
- 1 tablespoon grated garlic
- 1/4 teaspoon ground black pepper
- 6 tablespoons liquid seasoning - (Knorr or Worcestershire sauce)
To complete the dish
- 1 to 2 tablespoons cooking oil
- fried rice for three people - cooked and drained
- 3 eggs - soft boiled
To prepare fried rice
- 2 cups of cold rice
- green onions, chopped
- 6 cloves of garlic, minced
- 1⁄2 small onion
- salt and pepper to taste
To garnish
- sliced scallions
Instructions
Marinate the beef
- Cut the thinly-sliced beef into strips about half an inch wide.
- Place the meat in a bowl, add the garlic, pepper and seasoning. Mix well.
- Cover the bowl and let the meat marinate in the fridge overnight.
Cook the beef
- Heat the cooking oil in a frying pan.
- Spread the beef on the pan. Leave to sear for about two minutes then stir to break up lumps.
- Cook over high heat, stirring often, just until done.
- DO NOT OVERCOOK. Beef sliced so thinly should cook in about five minutes.
Preparation for Fried Rice
- To make the fried rice, first add some cooking oil over medium-high heat to the same pan from before.
- Now add the the garlic and onions to the pan and stir fry for about a minute.
- Then add the rice and salt and pepper to taste.
- Stir fry the rice until it is hot and well seasoned then remove it from the heat.
- In a clean pan, add some cooking oil and fry the eggs over medium-high heat.
Assemble the tapsilog
- Divide the cooked beef into three portions. Arrange over the fried rice leaving the center hollow.
- Crack the soft boiled egg / fried egg at the center of the bowl.
- Garnish the tapcitlog with sliced scallion before serving.
