Dilis are a Filipino delicacy consisting of anchovies, often dried, that are lightly battered before being deep-fried and served hot as an appetizer.
Ingredients
½ lb dried dilisanchovies
2 tbsp sugar
½ cup white vinegar
2 tbsp hot sauceTabasco
1 cup cornstarch
1 tsp saltif dried anchovies are not already salted
Vegetable oilfor frying
Instructions

Combine the cornstarch, sugar and salt in a bowl.

In a separate bowl, mix the vinegar and the hot sauce and coat the anchovies with this mixture.

Then dip the anchovies in the mixture of cornstarch, sugar and salt.

Deep-fry the anchovies over medium heat until golden and crisp.

Drain on a plate lined with paper towel. Serve hot or warm.
